This recipe goes with Braised Celery with Parmesan Polenta
Ingredients:
2 cups white vinegar
1/2 cup water
2 tablespoons sugar
2 teaspoons whole black peppercorns
5 peeled and smashed garlic cloves
1 tablespoon kosher salt
1 pound trimmed radishes
1/2 pound trimmed green beans
1 lemon
Directions:
1. In a saucepan, combine white vinegar, water, sugar, black peppercorns, garlic cloves, and salt and bring to a boil. Remove from heat and let sit for 15 minutes. Meanwhile, combine radishes, green beans, and the zest of 1 lemon in a large bowl. Add the vinegar mixture and let sit 15 minutes. Serve the remaining pickles with the polenta.
