I bought 3 lbs of white mushrooms on sale and wanted to do something quick and tasty. These are delicious- a spin off recipe from All Recipes. The possibility of their use is up to you! For smaller or larger quantities the recipe reduces or multiplies well.
Ingredients:
3 lbs white mushrooms, cleaned and sliced if needed
1 cup olive oil
1 cup red wine vinegar
3 cloves garlic mashed
2 tsp dry mustard powder
3 tbs dried parsley flakes
3 tbs brown sugar
1 onion sliced
1 tbs coarse salt
1/4 black pepper or to taste
Directions:
1. If mushrooms are large, cut them in half or into chunks
2. In a large sauce pot bring everything to a boil except mushrooms
3. Then add mushrooms
4. Stir well
5. Bring to a simmer
6. Partially cover and simmer 10-12 minutes or until mushrooms size reduced and are becoming tender, stirring now and then
7. Remove from heat
8. Let mushrooms cool in the liquid
9. Then place in container or a bowl and cover and chill
10. Note: I like to bring these to room temp a bit prior to serving so as to soften the olive oil
