Ate this once upon a time at a family owned business,wanted to try this at home.
Ingredients:
2-1/2 cups water
1-3/4 cups white vinegar
2 tablespoons sugar
1-1/2 teaspoons salt
20 peppercorns
16 whole allspice
1(1 pound) ring of bologna (not sliced)
1 large onion,sliced into rings
1(7-1/2 oz) jar of roasted green chilies
Directions:
1. Combine water,vinegar,sugar,salt,peppercorns and allspice in saucepan.
2. Bring to boil.
3. Reduce Heat.
4. Cover,simmer 10 minutes.
5. Remove from heat,cool completely.
6. Cut bologna into 1/2 pieces.
7. Layer bologna,onion rings and roasted chilies in large glass casserole.
8. Pour cooled liquid over top.
9. Cover and refrigerate 3 days.
