Pickled Beets. Not pickled like cukes, but good for prepping for a dinner the night before.
Ingredients:
1 c vinegar
1 c water
1/2 c sugar
1/2 tsp salt
1/4 tsp white pepper
3 c cooked beets, peeled and thinly sliced
1/2 tsp celery seed
Directions:
1. Combine water, vinegar, salt, sugar, and pepper and bring to a boil in a non-reactive saucepan.
2. Cool the 'brine'.
3. Place beets in a glass bowl and sprinkle with celery seed.
4. Cover with 'brine'.
5. Cover bowl with plastic wrap and refrigerate overnight.
