Warning: You may become addicted to these. The first time I saw them in a buffet I didn't get very excited. Then I found myself going back for another again and again. Easy to make and a few pickle butts and ham scraps for the cook.
Ingredients:
for about 25 pieces
3 oz package cream cheese
3 eight inch flour tortillas
10 pickles (i use a medium size about 1 inch thick by 3 inches long)
1/2 pound thin sliced deli ham (be sure to get whole pieces, not shredded scraps)
25 tooth picks
Directions:
1. I know you have it figured out already. Lay out a tortilla. Spread an even, thin coat of cream cheese on it. Put a layer of ham on top. Slap a pickle at the near end and roll it up. Cut into 3/4 inch rolls. Tough, I know.
2. Because the tortilla is round, you'll find you can't use the first two inches on the left side, and the last two inches on the right. Your first cut will be to take off the rough edge and the butt end of the pickle .... eat it yourself. Cook's treat. Push a toothpick through the end you're cutting off before you cut.
3. NOTE: My wife says they're even yummier if you use deli sliced corned beef.
