Ingredients:
4 oz feta
2 tbsp honey
1/2 tsp salt
1/2 c rice flour
Directions:
1. In a large bowl, mash the cheese, honey and salt together until well combined.
2. Add the flour and mix until a dough forms.
3. Turn the dough out onto a work surface and knead briefly.
4. Cover with plastic wrap and allow to rest at room temperature for about 20 minutes.
5. Divide the dough into 12 equal pieces.
6. Lightly flour a work surface and roll each piece into a very thin circle about 3 inches in diameter.
7. Lightly oil a nonstick griddle and heat over medium-low heat.
8. Grill each circle until golden or about 1 minute per side.
9. Oil the griddle after each use.
10. Serve warm topped with a dash of honey.
