Philly Turkey Sandwich

Ingredients:
1/4 cup(s) chicken broth
2 french rolls, split in half lengthwise
2 french rolls, split in half lengthwise
1 cup(s) grated monterey jack or mozzarella cheese
6 ounce(s) mushrooms, sliced
1 red onion
6 ounce(s) smoked turkey, thinly sliced (6-8 slices)
Directions:
1. Spray a saute pan with nonstick spray. Fry onion over medium heat until brown. Add mushrooms. Deglaze pan with 1/8 cup chicken broth. Remove onions and mushrooms and set aside.
2. In same pan, fry meat for about 3 minutes. Add remaining chicken broth.
3. Divide meat between two split French rolls. Place onions on top, cheese on top of onions. Place under broiler to melt cheese.
4. Serve with Dijon mustard and nonfat mayo.
