Ingredients:
1/2 lb rice noodles
3 tablespoons thai chiles, minced
3 tablespoons garlic, minced
3 tablespoons fresh ginger, minced
1/4 cup fish sauce
1/4 cup sugar
2 tablespoons sugar
1/4 cup rice vinegar
2 tablespoons fish sauce
1 teaspoon paprika
1/2 lb shrimp or 1/2 lb chicken meat or 1/2 lb tofu, diced
2 eggs
1/2 lb bean sprouts
4 -5 green onions, sliced
1 carrot, shaved with peeler
1/2 cup peanuts, pounded fine
1 lime, sliced
Directions:
1. Boil rice noodle for 10 min., drain.
2. Fry chili, garlic and ginger in wok.
3. add protein and cook until done.
4. add rice noodles and mix.
5. Mix sauce ingredients together, add to wok.
6. Slip eggs under simmering sauce and noodles, cook until done.
7. Add sprouts and green onions, mix well.
8. Garnish with shaved carrots, peanuts and sliced lime.
