One of those recipes that sprang from trying to use all the produce before it went bad! LOL This is good alone, over lettuce, pasta, burgers, etc.
Ingredients:
1/2 cup pickled banana peppers
1/4 cup black sliced olives
1/4 cup red sliced peppers
1/4 cup green sliced peppers
1/4 cup sliced purple onions
1/4 cup sliced mushrooms
1/4 cup sliced hot banana fresh peppers
1 large, ripe red tomato, sliced
1 cup italian vinigerette
pinch of basil, oregeno, salt, pepper, fresh garlic, cheese and parsley
Directions:
1. Mix together and serve over pasta, on sandwhiches or salad greens
