This is a pizza I love to do in the summer, I have lots of fresh basil coming in which means amazing pesto. I also use my 1 lb bread machine to make fresh dough. I usually top it with mushrooms, olives, and sliced roma tomatos. Listed below is the basic cheese version with is great all by itself.
Ingredients:
1 lb pizza dough (pre made or fresh made)
1/2 cup ricotta cheese
1/4 cup pesto sauce
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
1/2 cup feta cheese
1 tablespoon fresh parsley, chopped
Directions:
1. Preheat oven to 400.
2. Stretch or roll out dough to fit a 16in pizza pan.
3. Spread ricotta over dough.
4. Spread pesto over ricotta.
5. Sprinkle pizza with mozzarella, cheddar and feta.
6. Top with fresh parsley and any toppings of your choice.
7. Bake for 15 minutes or until crust begins to brown.
