Persian Rice

I found this on the back of a pkt dried spearmint leaves from Herbies.
Ingredients:
1 cup long grain rice, cooked
1/2 cup cashews
1/2 cup pine nuts
1 onion, finely chopped
1 tablespoon olive oil
1 tablespoon asian seasoning (persian)
2 teaspoons barberries
1/2 cup green peas
1/4 cup carrot, finely diced
1 teaspoon dried spearmint
Directions:
1. Spread rice in a shallow tray to dry for at least an hour.
2. In a dry pan, toast nuts until just browning.
3. Heat oil in a pan and saute onion until just transparent, add remaining ingredients and stir well to prevent clumping.
