Perfectly Peanutty Banana Bars

Deliciously nutty with the added bonus of bananas... it's like my favourite sandwich in a brownie form!
Ingredients:
1/4 cup low-fat peanut butter
1 cup ripe mashed bananas (about 3)
1/4 cup low-fat plain soy milk
1 tsp vanilla
3 tbsp hot water
1 tbsp cornstarch
1/2 cup flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 cup dry roasted peanuts, chopped
Directions:
1. Preheat oven to 350°F and grease an 8-inch square baking pan.
2. Beat together the peanut butter and banana until smooth with electric beaters.
3. Beat in the soy milk, vanilla, water, cornstarch, flour, baking soda and baking powder.
4. Fold in the peanuts.
5. Bake for 30 minutes until browned. Chill before slicing.
