I received this recipe in the mail, as an advertisement to purchase a cookbook. I think the company is called Easy to Bake, Easy to Make. I never purchased the cookbook, but I have enjoyed these rolls many times. The prep time is a guess because I have never timed myself rolling the dough into balls and I am really not sure how long it took me. Also the recipe calls for 2 packets of yeast (it doesn't say what size packets), and according to my jar of yeast, each packet is 2 1/4 teaspoons.
Ingredients:
1 cup warm water (105 to 115 f)
4 1/2 teaspoons active dry yeast
1/2 cup butter, melted
1/2 cup sugar
3 eggs
1 teaspoon salt
8 1/2 cups unbleached all-purpose flour
additional melted butter (optional)
Directions:
1. Combine the warm water and yeast in a large bowl. Let the mixture stand until yeast is foamy, about 5 minutes.
2. Stir in butter, sugar, eggs & salt. Beat in flour, 1 cup at a time, until dough is too stiff to mix (some flour may not be needed).
3. Cover and refrigerate 2 hours or up to 4 days.
4. Grease a 13x9 inch baking pan. Turn the chilled dough out onto a lightly floured board. Divide dough into 24 equal size pieces. Roll each piece into a smooth round ball; place balls in even rows in the prepared pan. Cover and let dough balls rise until doubled in volume, about 1 hour.
5. Preheat oven to 375°F Bake until rolls are golden brown, about 15 - 20 minutes. Brush warms rolls with melted butter if desired.
