Perfect Pineapple Topping

I got this recipe from a Jamie Oliver cookbook and I really like it because it is so simple but comes across very gourmet. It is the perfect accompaniment to pineapple becuase it brings out the freshness and balances the sometimes sickly sweetness of the fruit. It is absolutely fantastic served on a hot summers day with cold yoghurt
Ingredients:
1 fresh ripe pineapple
4 tablespoons caster sugar
1/2 cup fresh mint
Directions:
1. Cut up your pinapple into chunks and put in fridge to chill.
2. Put the mint and sugar into a mortar and pestle (I don't have one so I just used a mug and muddle stick- it worked a treat!) and grind it together (or as Jamie puts it- bash the hell out of it) untill the sugar changes colour to green and the you can smell the mint.
3. Then all you need to do is sprinkle over the pinapple and serve immediately while the pineapple is cool!
4. enjoy.
