I just call them Straitjackets, pretty much our favorite appetizer. Not as spicy with the seeds removed so that everyone can enjoy them. Of course I've been known to leave a few in. The Lime really puts the flavor in them. Read more . I usually double the recipe, you will need them when everyone gets a taste of these!
Ingredients:
8 fresh jalapeno peppers
4 oz. cream cheese, softened
1 teaspoon grated lime peel
1 tablespoon lime juice
1-1/2 tablespoons fresh cilantro chopped
1 8 oz. pkg. refrigerated cresent dinner rolls
1/4 cup butter, melted
grated parmesan cheese
Directions:
1. Heat oven to 375, spray cookie sheet with cooking spray
2. Mix cream cheese. Lime peel, Lime Juice and Cilantro
3. Being careful, remove stems from Jalapenos( you want to just take the stem off so the split peppers are little boats with the ends intact)
4. Cut Jalapenos in half lenghtwise and remove seeds.
5. Unroll the dough and separate into the 8 triangles, cut each triangle in half to make 16 triangles
6. spoon approx. 1 teaspoon of cream cheese mixture into each pepper half
7. Place each half pepper, cream cheese side down on each triangle with point of pepper at the top of the triangle
8. Wrap the sides of triangle around pepper (like a straitjacket) and pinch alittle to seal, pull the top of triangle over the end of pepper and pinch alittle to seal ( you may have to work at it alittle depending on the size of the pepper halves to, see extra pics)
9. brush them with butter and springle generously with grated parmesan cheese
10. Bake in 375 oven for 10-15 minutes until golden brown.
