Pepperoni Frittata

This recipe is from Hormel Pepperoni that I tore out of a magazine many years ago.
Ingredients:
1/2 cup onion, chopped
1 cup sliced zucchini, sauteed or 1 cup cut broccoli, cooked
1/2 cup cauliflower, cooked
2 -3 tablespoons olive oil
5 eggs, slightly beaten
1/3 cup grated parmesan cheese
3 1/2 ounces sliced pepperoni
Directions:
1. Saute onion in olive oil over medium heat until tender.
2. Add zucchini or broccoli and cauliflower to onions.
3. In a seperate bowl beat eggs and cheese together until blended.
4. Add pepperoni to egg mixture.
5. Pour over vegetables in skillet.
6. Cook on low heat about 15 minutes until just about set.
7. Finish cooking by putting pan under the broiler for about 1 minute until completely set.
