Peppermint Chai Tea

This is a different sort of chai, from John Robbins' May All Be Fed . I love that book's recipes and so am posting this even though I haven't tried it yet- it's sure to be good!
Ingredients:
4 cups water
1 tablespoon cardamom pod
1 tablespoon fresh ginger, grated
1 teaspoon whole cloves
1 teaspoon black peppercorns
1 cinnamon stick (3 inches long)
4 peppermint tea bags or 4 teaspoons loose peppermint tea
pure maple syrup
vanilla soymilk or plain soymilk
Directions:
1. In a medium saucepan, combine the water and spices.
2. Cover and bring to a boil over high heat. Immediately reduce the heat and simmer for 5 minutes.
3. Remove from the heat and add the peppermint tea. Cover the pan and let steep for 3 to 5 minutes; the longer you leave it, the stronger the tea will be.
4. Strain out the spices and tea. Serve immediately, letting each person add syrup and soy milk to their taste.
