I got this one from an old General mills cook book.
Ingredients:
1 1/2 lbs beef top round steak, 1-inch thick, or
1 1/4 lbs sirloin, 1-inch thick
1/4 cup extra virgin olive oil
1 cup water
1 medium onion, cut into 1/4-inch slices
2 garlic cloves, minced
1/4 teaspoon ground ginger
2 medium green peppers, sliced 3/4-inch wide
1 tablespoon cornstarch
2 -3 teaspoons sugar
2 tablespoons soy sauce
2 medium tomatoes, sliced into 1/8ths
Directions:
1. Trim fat from beef.
2. Cut beef into 2x1x1/4 inch strips.
3. Heat oil in large skillet.
4. Add beef turning freaquently until brown.(about 5 min).
5. Stir in water, onion, garlic and ginger.
6. Heat to just boil. cover and reduce heat to a simmer. 12 to 15 minutes for round steak and 8 to 9 minutes for sirloin.
7. Add green pepper during last 5 minutes simmering.
8. Blend corn starch, sugar and soy sauce. stir into skillet untill the mixture boils and thickens. boil and stir for one minute.
9. Place cut tomatoes on beef mixture.
10. Cover and cook over low heat just until tomatoes are heated through. (about 3 mins).
11. serve over rice.
