I'm not a great baker, but I love this easy recipe - it's from the LA Times. I use slightly less pepper than called for.
Ingredients:
2 tbsp. melted butter
2 cups flour
1 tbsp. sugar
1 tbsp. baking powder
1 tsp. kosher salt
1 tbsp. plus 1 tsp. freshly ground pepper
1 cup freshly grated parmigiano-reggiano
2 large eggs
1 cup whole milk
Directions:
1. Preheat oven to 350ºF degrees.
2. Butter 9” x 5” loaf pan and set aside. In a large bowl, combine the flour, sugar, baking powder, salt and pepper, and mix with a whisk until thoroughly combined; make sure the pepper is well distributed.
3. Stir in the cheese. In another bowl, combine the eggs, milk and melted butter, and mix lightly.
4. Pour into the bowl with the dry ingredients and cheese.
5. Mix with a rubber spatula until all the ingredients are well moistened.
6. Scrape the dough into the prepared pan and bake for 1 hour, or until a toothpick inserted into the center comes out clean.
7. Cool slightly before turning out of the pan.
