Pepper Jack Meatloaf

Ingredients:
1 egg
1 cup seasoned bread crumbs
1/4 cup of chopped onion
1/2-1 teaspoon salt
1/2 teaspoon pepper
1 -1 1/2 lb lean ground beef
1 cup shredded monterey jack pepper cheese or 1 cup monterey jack cheese, divided
Directions:
1. Preheat the oven to 350 degrees.
2. In large bowl combine the egg, bread crumbs, onion, salt and pepper.
3. Crumble beef over mixture and mix well.
4. In a 8x4-inch greased pan press half of the beef mixture onto the bottom and halfway up the sides.
5. Sprinkle 3/4 of a cup of cheese over meat within 1/2 in of sides.
6. Pat remaining beef mixture over cheese.
7. Bake uncovered for 50 - 55 minutes.
8. Sprinkle the remaining cheese on top and bake for another 5 minutes or until cheese is melted.
9. Let stand for 10 minutes before slicing.
