Penny's Pancakes

These pancakes have a nice texture and my family loves to eat them good cold with jam after.
Ingredients:
1 1/3 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons sugar
1 egg
1 1/4 cups milk
3 tablespoons melted butter or 3 tablespoons vegetable oil
1/4 teaspoon vanilla
Directions:
1. Stir Flour, Baking powder, salt and sugar together.
2. Beat egg and then add milk.
3. Slowly add egg mixture in well of dry ingredients. Add butter and vanilla. Stir together. Batter will be lumpy.
4. Let batter sit for at least 30 minutes.
