Penne with Eggplant, Thyme, Cheese
Ingredients:
8 oz penne pasta
2 tablespoons olive oil
1 lb eggplant
2 tablespoons sun-dried tomatoes
1/4 teaspoon crushed red pepper
1 teaspoon garlic powder
1/4 teaspoon salt
1/3 cup white wine
1 teaspoon thyme leaves
4 tablespoons of parmasan cheese
Directions:
1. Cook pasta according to directions, drain.
2. Saute olive oil, eggplant, tomatoes, crushed red pepper until brown about 10 mins.
3. Stir in garlic and salt for additional 5 mins.
4. Add wine and thyme, reduce heat and cook for about 10 mins.
5. Add pasta to skillet with eggplant mix and cook 2 mins.
6. Spoon into pasta bowls and add cheese.
