PENNE SALAD WITH THREE HERBS CAPERS AND TUNA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Nixon Estate in Canton, Texas in 1993.
Ingredients:
6 ounce can olive oil packed tuna drained
1-1/2 teaspoons salt
1/2 pound penne pasta
2 tablespoons fresh lemon juice
2 tablespoons extra virgin olive oil
1/2 teaspoon freshly ground pepper
1/4 cup chopped fresh flat leaf parsley
1/4 cup chopped fresh basil
1/4 cup chopped fresh cilantro
2 teaspoons capers rinsed and drained
Directions:
1. Place tuna in small bowl then break into flakes using fork and set aside.
2. Heat large pot filled with water to boil.
3. Add penne and 1 teaspoon salt then cook until al dente about 12 minutes.
4. Drain and transfer to large serving bowl.
5. Add lemon juice, olive oil, remaining salt and pepper then toss to coat.
6. Add tuna, parsley, basil, cilantro and capers then mix gently.
7. Taste and adjust seasoning then cover and refrigerate to chill about 1 hour.
8. Serve at room temperature.
