A really easy, delicious chewy drop cookie that uses up the left over rice krispies after krispie treats. I got this from my next door neighbour, Hazel Bloomfield, a former baker. Excellent and carmelly, one of my kids long time favorites.
Ingredients:
1 cup butter
1 cup packed brown sugar
1 egg
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1/2 teaspoon cream of tartar
1/2 teaspoon salt
2 cups rice krispies
Directions:
1. Preheat oven to 350°F.
2. Cream butter and sugar.
3. Beat in egg and vanilla.
4. Sift the dry ingredients and beat them into the sugar mixture.
5. Blend in rice krispies.
6. Shape into small balls (I use a 1-inch ice cream scoop) and press down with a sugar coated fork.
7. Bake for approximately 12 minutes or until pale golden.
