Pecan-Stuffed Eggs

From Southern Living's The Southern Living Cookbook. Prep time does not include hard-cooking the eggs.
Ingredients:
6 hard-cooked eggs
3 tablespoons mayonnaise
1/4 cup chopped pecans
1 teaspoon grated onion
1 teaspoon vinegar
1/4-1/2 teaspoon dry mustard
1/8 teaspoon salt
1/2 teaspoon minced fresh parsley
fresh parsley sprig (optional)
Directions:
1. Slice eggs in half lengthwise and remove yolks. Mash yolks with a fork.
2. Add next 7 ingredients.
3. Spoon mixture into reserved egg whites. Garnish with parsley sprigs if desired.
