I know everyone has a pecan pie recipe, but really my mom's is the best! Try it, you'll see! And it's so easy you'll wonder why you ever bought one at the store! I recommend you put foil or a pie crust band on the crust until the final 15 minutes of baking.
Ingredients:
1/2 cup butter, softened
1 cup sugar
1 cup corn syrup (light or dark seem the same to me)
1/2 teaspoon salt
1 1/2 teaspoons vanilla
3 eggs, beaten
2 cups pecans (pieces or halves)
1 pie shell, 9 inch
Directions:
1. Preheat oven 350-375 degrees.
2. In a mixer (or by hand) mix butter, sugar, syrup, salt, and vanilla. Beat well.
3. Add eggs until blended.
4. Fold in pecans by hand.
5. Pour into pie shell.
6. Cover pie rim with pie crust band or foil pieces.
7. Bake for 40-50 minutes.
8. Custard is set when a knife inserted in the center comes out clean.
