Peas In Almond-herb Cream

Spring flavors, even in the middle of winter! Peas in a light, creamy, herb-flavored sauce.
Ingredients:
2 cups fresh or frozen green peas
2 cups almond milk, divided (1-1/2 cup + 1/2 cup)
1 tbsp chopped fresh thyme or 1 tsp dried
2 tsp chopped fresh mint or 1 tsp dried
1 tbsp chopped fresh chives or 1 tsp dried
1/4 tsp celery seed
1/4 cup rice flour (or wheat flour if gluten is not a problem)
salt and pepper to taste
Directions:
1. Combine peas, 1-1/2 cup almond milk, and seasonings in saucepan over medium heat.
2. Whisk flour and remaining milk until completely dissolved.
3. When peas are just beginning to bubble, add flour mixture to pan.
4. Continue stirring over medium heat until thickened.
5. Adjust salt and pepper to taste and serve hot or cold.
