Prep: 6 minutes. This variation on traditional Waldorf salad features pears instead of apples and red grapes in place of raisins for extra sweetness.
Ingredients:
1 tablespoon light mayonnaise
2 tablespoons reduced-fat sour cream
1 teaspoon fresh lemon juice
1/8 teaspoon salt
2 cups (3/4-inch) coarsely chopped bartlett pear (about 2 pears)
1 cup small seedless red grapes
2 tablespoons chopped walnuts
arugula leaves or mixed greens (optional)
Directions:
1. Combine first 4 ingredients in a small bowl; stir until smooth.
2. Combine pear, grapes, walnuts, and mayonnaise mixture in a large bowl; toss gently. Serve salad over arugula or mixed greens, if desired.
