The flavors of pears, celery and fennel all work together to give a really unusual tasting salad. Make this salad when pears are at their best. If good pears are not available you can use apples, melon or even star fruit!
Ingredients:
1/2 lemon, juice
2 pears, cored and sliced
2 teaspoons tarragon vinegar or 2 teaspoons white wine vinegar
1 teaspoon pernod (optional)
1 teaspoon whole grain mustard
1 pinch salt
1 pinch sugar
2 tablespoons sesame oil
2 sticks celery, sliced
1 fennel bulb, thinly sliced
Directions:
1. Drizzle the lemon juiced over the sliced pears.
2. Mix together the vinegar, Pernod if you are using it, mustard, salt and sugar until well blended, then gradually whisk in the sesame oil.
3. Arrange the fruit and vegetables attractively in a bowl or on individual plates, and drizzle on the dressing.
