Ingredients:
1 3/4 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
2 tablespoons pecans, chopped
1 1/2 cups oatmeal (quick cooking)
1 pear, cored, peeled and chopped
1 cup buttermilk
1/2 cup brown sugar
1/2 cup maple syrup
2 tablespoons vegetable oil
1 egg
Directions:
1. Preheat oven to 400 degrees F Line muffin tin with paper liners or spray with pam.
2. Combine dry ingredients (flour - salt) in a bowl.
3. In a small bowl combine topping ingredients (peans and 2 tablespoons oats).
4. In a third bowl combine remaing oats and the remainder of the ingredients (pear - egg) - let stand for 5 minutes. And then add mixture to the flour mixture, stirring until combined.
5. Spoon batter into prepared cups, filling about 2/3 full and then sprinkle with topping mixture (pecan/oats). and bake for 15-20 minutes or until toothpick inserted in center comes clean.
6. Remove and cool on rack.
