PEAR CRISP WITH LEMON SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Turner Estate in Dallas, Texas in 1997.
Ingredients:
2 tablespoons plus 1/4 cup all purpose flour divided
1 tablespoon granulated sugar
1 teaspoon grated lemon peel divided
5 cups sliced peeled ripe pears
1/2 cup old-fashioned oats
1/4 cup packed brown sugar
1/8 teaspoon ground cardamom
3 tablespoons cold butter
1/4 cup sliced almonds
lemon sauce
1/4 cup sugar
2 teaspoons cornstarch
1/2 cup cold water
1 egg yolk beaten
1 tablespoon butter
1 tablespoon lemon juice
1/4 teaspoon grated lemon peel
Directions:
1. In large bowl combine 2 tablespoons flour, sugar and 1/4 teaspoon lemon peel.
2. Add pears then gently toss to coat.
3. Transfer to a greased square baking dish.
4. Combine oats, brown sugar, cardamom, remaining flour and lemon peel then mix well.
5. Cut in butter until mixture resembles coarse crumbs then stir in almonds.
6. Sprinkle over pears and bake at 375 for 40 minutes.
7. For lemon sauce combine sugar and cornstarch in saucepan.
8. Gradually stir in water until smooth.
9. Stir in egg yolk, butter, lemon juice and lemon peel and cook for 3 minutes longer.
