This is a moist flavorful bread, great when fresh pears are in season but not bad with canned pears either. Even though it appears to have alot of sugar it isn't too sweet. The dough is very thick before you add the pears and craisins.
Ingredients:
3 eggs
1 1/2 cups brown sugar
1 cup white sugar
1 cup oil
1 teaspoon salt
1/4 teaspoon baking powder
1 teaspoon baking soda
3 teaspoons cinnamon
3 teaspoons vanilla
3 cups flour
4 cups pears, peeled, cored, and chopped up
1 1/2 cups pecans, chopped
1 cup craisins
Directions:
1. Heat oven to 325°F
2. Mix all wet ingredients with mixer; add the dry ingredients and finally mix in the pears, nuts and craisins.
3. Grease 2 loaf pans, divide the dough between the 2 pans.
4. Bake for 1 hr 15 min to 1 hour 30 min or until a toothpick inserted comes out clean. The bread does have a dark appearance so don't be alarmed by that.
