Fruity and dense tart, delicious when served warm with a dollop of cream or frozen yogurt on top. William pears or similar are fine, but you can use your favorite ones with firm and sweet flesh.
Ingredients:
1 unbaked 9-inch pie crust
4-6 pears, rinsed and cored, thickly sliced
zest and juice of 1 lemon
2 cups wild or red mixed berries (your choice), fresh or frozen (unthawed)
1 cup red berries or strawberry jam
1 tsp ground cinnamon
1 tsp ground cardamom
1/4 tsp ground cloves
1 cup lightly ground quick-cooking or traditional oats
1/2 cup light brown sugar (up to 3/4 if you like it very sweet)
Directions:
1. Preheat oven to 375ºF
2. Place pie crust on an oven-proof tart-pan and prick bottom and sides with a fork. Line pastry with a double thickness of foil and bake for 8 minutes. Remove foil. Bake 4 to 5 minutes more or till set and dry.
3. Arrange sliced pears on the partially baked tart shell and pour lemon juice over the pears. Add berries and spread jam over the fruit.
4. In a medium bowl combine cinnamon, cardamom and cloves. Add oats, lemon zest and sugar. Mix well and spread over the fruit. Top with a lattice crust if using homemade pastry.
5. Bake in preheated 375ºF oven about 45 minutes or till fruit is bubbly and pastry is golden. Cool on wire rack.
