Peanuts With Indian Spices

Ingredients:
6 cups unsalted dry-roasted peanuts
3 tablespoons black sesame seeds
3 large egg whites
2 tablespoons ground coriander
2 tablespoons brown sugar
1 tablespoon ground cumin
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1/2 teaspoon ground red pepper
Directions:
1. Preheat ove to 300.
2. Combine coriander, brown sugar, cumin, salt, black pepper and red pepper in a small bowl.
3. Beat egg whites in a medium bowl for 1 minute or until frothy. Add spice mixture, peanuts and black sesame seeds and stir well.
4. Spread on silpat in a pan in single layer, use 2 if needed.
5. Bake for 30 minutes or until nuts are dry and roasted, stirring occasionally.
6. Cool completely.
