Peanut Sesame Pasta

My version of this favorite classic which every seems to love
Ingredients:
1 heaping cup peanut butter (smooth or crunchy)
1 c very hot liquid ( black tea & see below )
1 lb pasta ( oriental pasta or fettuccine, linguine etc )
1 ts vinegar ( see below ) or to taste
1 ts fresh grated ginger ( bottled is fine too )
1 tb soy sauce or to taste
1 clove garlic crushed or to taste
dash hot sauce or to taste
2 tb honey or to taste
few splashes oriental sesame seed oil added just before serving
garnish
white sesame seeds
black sesame seeds
radish flowers
green onion curls
chopped cucumber
Directions:
1. Place peanut butter in a large bowl.
2. Gradually add hot liquid ( for changes of flavor instead of Chinese black tea try : cream of coconut,coconut milk, chicken broth) and stir until smooth.
3. At first it will look curdled but will become smooth.
4. Add more of chosen liquid to reach the consistency you want.
5. I like mine pourable like thick cream.
6. Then add the honey ( btw honey keeps the mixture smooth and pliable ) garlic, soy,ginger, vinegar ( could be red wine, rice wine, garlic vinegar, lime juice,lemon juice) hot sauce, increasing those flavors you like.
7. The sauce may be covered and refrigerated at this point.
8. If it thickens under refrigeration just thin with a bit more hot liquid .
9. If you use the cream of coconut which is very sweet you may want to omit the honey as also with Coconut milk (liquid from the fresh coconut ) is less sweet and thick.
10. I personally like the base recipe with the black tea but people's taste vary . Chicken broth ( non vegan of course ) is my 2nd favorite version with the coconut liquid last.
11. But all three are super. You may even prepare the pasta ahead of time.
12. Cook al dente and rinse and drain.
13. Toss with some oil and keep covered until use.
14. Try Chinese or Japanese types of noodles or pasta for a nice change.
15. Then to present: place pasta on a colorful platter.
16. Now stir in the oriental sesame seed oil into peanut mixture ( it tends to dissipate and that's why its added just before serving for best flavor )
17. Garnish platter with black & white sesame seeds, radish flowers, green onion curls and chopped cucumber or even baby whole canned corn.
