This is a cookie recipe my family has been making for Christmas, most of my life. It came from a Christmas Craft and Recipe book. When I make this I add a little extra flour, half the salt, and bake the cookies for less time than called for... 8-11 minutes depending on the oven. This makes soft chewy cookies. Ingredients:
1 cup butter |
1 cup peanut butter |
3/4 cup firmly packed brown sugar |
3/4 cup sugar |
2 eggs |
1 1/2 teaspoons vanilla extract |
2 1/2 cups all-purpose flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
1/2 teaspoon salt |
2 cups coarsely chopped miniature peanut butter cups |
Directions:
1. Preheat oven to 350 degrees.
2. Cream first six ingredients until fluffy.
3. Sift dry ingredients together.
4. Gradually stir dry ingredients into creamed mixture.
5. Stir in chopped peanut butter cups.
6. Drop by heaping spoonful onto ungreased cookie sheet.
7. Bake 12 to 15 minutes or until lightly browned.
8. Remove from cookie sheet and cool on wire rack.
