Peanut Butter Sandwich Cookies

Great cookie that everyone is sure to like. They aren't a quick fix but definately worth the time you invest.
Ingredients:
cookie
1/2 cup butter
1/2 cup granulated sugar
1/2 cup brown sugar
1/4 tsp salt
1 large egg
1 tsp vanilla extract
3/4 cup peanut butter
1 1/4 cup all purpose flour
1 tsp baking soda
filling
1/4 cup whipping cream
1 tbsp butter
2 tbsp light corn syrup
6 oz semi-sweet baking chocolate cut in chunks ( if you choose to use chocolate chips increase the butter to 2 tbsp)
Directions:
1. COOKIE:
2. Cream the butter and sugar together. Add salt, egg, and vanilla and beat until smooth.
3. Add flour and baking soda and beat until combined.
4. Refrigerate dough for 20 minutes or until it firms a bit.
5. Divide dough into 2 portions.
6. Using wax paper roll each portion into logs about 1 1/2 inch in diameter.
7. Refrigerate for 2 hours or until firm.
8. Preheat oven to 325. Cut cookies into slices between 1/4-1/2 inch.
9. Place on sprayed baking sheet and bake 12-14 minutes, or until edges brown slightly.
10. Cool on wire rack.
11. FILLING:
12. Mix whipping cream, butter, and corn syrup in heavy saucepan, heating til it simmers.
13. Remove from heat and immediately add chocolate.
14. Stir until a smooth sauce.
15. Will thicken as it cools.
16. After both are cool, ice bottom of cookie. Placing cookies bottoms together.
