Peanut Butter Oatmeal Cookies

This is in the Better Homes and Garden cookbook and I have kind of tweaked it a little bit. These are one of my kids favorite cookies, plus it better for them with the oats in them. I have added butterscotch chips if I was out of chocolate chips and they taste great with them too! I have also omitted the oatmeal altogether and increased the flour to 2 & 1/2 Cups.
Ingredients:
1/2 cup creamy peanut butter
1/2 cup butter
1 cup brown sugar
3/4 cup white sugar
1 egg
2 teaspoons vanilla extract
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 cups oatmeal
1 -2 cup chocolate chips
Directions:
1. In a large mixer, beat the peanut butter and the butter together until well mixed. Add the sugars and beat in well. Add the egg and vanilla and continue to mix in well.
2. In a separate bowl, combine the flour, baking powder, and salt and stir them together well.
3. Add the flour to the cream mixture and beat in well. Add the oatmeal and mix until well combined. Stir in the chocolate chips.
4. Drop onto a cookie sheet and baking at 375°F for about 10 minutes or so.
5. You may need to wait for about 1 minute or so before removing from the pan to cool. Enjoy warm with some milk!
