From D. Huffer in the Simple & Delicious magazine. I need some place to keep this recipe safe from the recycling bin monitored by DH. They say reduced fat or generic brands of peanut butter are not recommended for this recipe.
Ingredients:
1 1/2 cups peanut butter
1/2 cup butter, softened
1 cup sugar
1 cup packed brown sugar
3 eggs
1 teaspoon vanilla extract
4 1/2 cups quick-cooking oats
2 teaspoons baking soda
1 cup miniature semisweet chocolate chips
1 cup miniature m&m baking bits
Directions:
1. In a large mixing bowl, cream peanut butter, butter and sugars together.
2. Add eggs, one at a time, beating well after each addition.
3. Beat in vanilla.
4. Combine oats and baking soda and gradually add to the creamed mixture.
5. Stir in chocolate chips and M&M bits.
6. Drop by heaping tablespoonfuls 2-inches apart onto ungreased baking pans.
7. Bake at 350 for 12-14 minutes or until edges are browned.
8. Remove to wire racks to cool.
