Peanut Butter Cup Cookies

Ingredients:
40 miniature peanut butter cups
1/2 cup butter or margarine , softened
1/2 c. creamy peanut butter
1/2 c. packed light brown sugar
1/4 c. granulated sugar
1 egg
1 2/3 c. all purpose flour
1 tsp. baking soda
1 egg white
1 tbsp. water
1 cup crushed cornflakes
Directions:
1. Heat oven to 375.
2. Remove wrappers from peanut butter cups
3. In large mixer bowl, beat butter, peanut butter, brown sugar, sugar until light and fluffy.
4. Stir together flour and baking soda:; add to butter mixture
5. Shape dough into 1 inch balls.
6. Stir together egg white and water: beat with fork until foamy.
7. Roll balls in egg white mixture, then in crushed cereal.
8. Place on ungreased cookie sheet
9. Press with thumb or fingertips in center making and indentation
10. Bake 8 to 10 min or until cookies are set.
11. remove from oven and immediately press peanut butter cup onto each cookie.
12. Cool 1 min. remove carefully to wire rack to cool completely
13. makes about 3 1/2 dozen
