Easy Cheap and not found on a Street Corner. Great dessert for a Pig Pick'n
Ingredients:
2 cups milk
4 tablespoons butter (unsalted)
1/2 teaspoon salt
1/3 cup sugar
1/4 cup corn starch
1/2 cup cold water
3 egg yolks beaten
3 tablespoons creamy peanut butter
1 teaspoon vanilla
1 9 pre baked pie shell
whipped cream
chopped peanuts (salted)
Directions:
1. IN SAUCEPAN BRING MILK BUTTER AND SALT TO BOIL
2. IN SMALL BOWL, MIX SUGAR AND CORNSTRARCH WITH WATER. WHEN SMOOTH MIX IN EGG YOLKS.
3. GRADUALLY STIR IN ONE-FORTH HOT MILK MIXTURE INTO BOWL WTH CORNSTARCH MIXTURE.
4. STIR BACK INTO MILK MIXTURE IN PAN AND COOK OVER MEDIUM HEAT WISKING CONSTANLY; RETURNING MIXTURE TO SLOW BOIL AND BOIL AN ADDITIONAL MINUTE OR UNTIL THICK AND SMOOTH.
5. REMOVE PAN FROM HEAT AND WHISK IN PEANUT BUTTER AND VANILLA.
6. POUR PIE FILLING INTO PRE-BAKED PIE SHELL.
7. COVER SURFACE WITH PLASTIC WRAP AND REFRIGERATRE UNTIL SET AND CHILLED.
8. TO SERVE REMOVE PLASTIC WRAP AND TOP WITH WHIPPED CREAM AND SPRINKLE WITH PEANUTS
