I bet there is alot of postings for this amazingingly, delicious peanut butter cookie. This recipe won me over and converted me to love peanut butter cookies. My secret and makes all the difference is go to whole foods and buy freshly made peanut butter. Read more . Even the natural peanut butter in jars in the supermarket dont compare when making this cookie!! It turns out so delicate and melt in your mouth.
Ingredients:
1 egg
1 cup of sugar
1 cup of natural peanut butter, freshly ground at you local natural food store. whole foods has this.
1 teaspoon baking soda
Directions:
1. Cream the egg and sugar well.
2. Add baking soda. Mix well.
3. I nuke the peanut butter a little bit so it softens up some. Not so it is so hot. then add to the above mixture.
4. I use cookie scoops .
5. First batch I made tiny cookies and got alot out of it.
6. Last time I made this I used about a tablespoon scoop and got about 16 cookies. I liked them bigger
7. Place on greased cookie sheet. Not a dark sheet, will brown or burn.
8. With fork make the usual criss cross pattern with your fork.
9. Bake 350 for 8 to 10 minutes.
10. When done remove from oven and let sit on the sheet 2 minutes or they will fall apart. Use a metal spatula to remove. Plastic is to thick and will break them up.
11. You can dip each side into melted chocolate and then into chopped peanuts.
12. Enjoy! I found the picture from kraft. Their recipe is a little different
