From The New American Heart Association Cookbook, with 49 calories a cookie, less if you use ICBINB! and low-fat peanut butter!
Ingredients:
1/4 c. butter, softened
3/4 c. light brown sugar, packed
1/2 c. sugar
1/3 c. peanut butter
2 egg whites
1/4 c. unsweetened applesauce
1/2 tsp. baking soda
2 1/2 c. all-purpose flour
1 tsp. vanilla extract
Directions:
1. Preheat oven to 350 degrees Farenheit.
2. In mixing bowl, cream margarine. Gradually add sugars, beating after each addition, until creamy.
3. Add peanut butter, egg whites, applesauce, and baking soda; beat well.
4. Gradually add flour to batter, beating after every addition.
5. Stir in vanilla extract.
6. Roll dough into 60 balls, roughly the size of a pecan or the bowl of a measuring teaspoon. Put on non-stick baking sheets. Flatten balls slightly with the back of a wet fork.
7. Bake for 12 to 15 minutes, or until light brown.
