I loved this recipe when I was a kid and now I also love making them. It came from an old family recipe that my grandma had for quite a while until I took over. For a little fun, sprinkle the cookies with red and green sugar after baking for Christmas.
Ingredients:
1 cup shortening or 1 cup crisco
1 cup granulated sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
1 cup peanut butter
3 cups sifted enriched flour
2 teaspoons baking soda
1/2 teaspoon salt
Directions:
1. Preheat oven to 375.
2. Cream together shortening, sugars, eggs, and vanilla until light and fluffy.
3. Stir in peanut butter.
4. Sift together dry ingredients and stir into creamed mixture.
5. Form into small balls.
6. Place about 2 inches apart on ungreased cookie sheet *cookies will get MUCH bigger*.
7. Press down with back of fork to make criss-cross *optional*.
8. Bake 10-15 minute.
