Peanut Butter Candy Jumbo Cookies

Ingredients:

Directions:

  1. Pre-heat oven to 375 degrees
  2. COOKIES:-
  3. With an electric mixer, beat peanut butter & butter in large bowl at medium speed
  4. Stir together sugar, baking powder & baking soda & then beat it into the peanut butter mixture until well blended
  5. Beat in the vanilla & egg until well blended
  6. On low speed, beat in flour until just combined, scraping down the side of the bowl
  7. Stir in peanut butter cups with wooden spoon
  8. Cover with plastic wrap & place in fridge until firm - about 1 hr
  9. Divide dough into 9 pieces
  10. Pat out each piece & form into cookies 4 inches across (they will spread to make 5 inch cookies)
  11. Can divide the dough into smaller pieces to make more cookies, but give them room to spread about 1 inch
  12. Place cookies on un-greased cookie sheets
  13. Bake 10 mins or until lightly browned
  14. CHOCOLATE PIPING:-
  15. Place chocolate in small resealable plastic freezer bag & seal, squeezing out air
  16. Microwave on 50% power for 1 min
  17. Turn bag over & microwave on medium 1 min or until melted
  18. Knead bag until chocolate is smooth
  19. Cut off tiny corner og bag & pipe decorative lines on cookies
  20. Let stand until chocolate has set
