Peanut Butter Banana Stuffed French Toast

This is a good weight gainers recipe. You can also use pure maple syrup instead of peanut butter.
Ingredients:
8 slices whole wheat bread (thick slices)
4 large bananas
1/2 cup whole milk
1 teaspoon vanilla extract
1 egg
1/8 teaspoon cinnamon
1/2 cup natural peanut butter
Directions:
1. Pre-heat the over to 350 degrees.
2. Put one banana on each of 4 slices of bread. Smoosh with a fork, but leave some chunks for texture. Put remaining slices of bread on top of them to make sandwiches.
3. Whisk the eggs, vanilla, cinnamon and milk in a glass baking dish.
4. Put two sandwiches in the glass dish. Let them soak up the egg for 60 seconds on each side. Repeat with the remaining
5. sandwiches.
6. Spray a large skillet with cooking spray. Over medium heat, cook two sandwiches at a time over medium heat for two minutes on each side. Repeat with the other sandwiches.
7. Transfer sandwiches to a baking sheet and bake for 8-10 minutes.
8. Spread each sandwich with 2 tbs. peanut butter immediately after removing from over. Sprinkle powdered sugar over them to taste.
