This is a recipe that my godson complains about. I make it for Christmas and he complains that it shouldn't be just for Christmas! Like most of my recipes it is simple and usually a crowd pleaser. My coworker brought the empty tin to my desk and said No More!!!! because she found them irresistable.
Ingredients:
1/2 cup butter
2 cups chunky peanut butter
1 teaspoon vanilla (optional)
454 g powdered sugar
3 cups rice krispies cereal
2 ounces paraffin wax or 2 ounces shortening
1 (24 ounce) package chocolate chips
Directions:
1. Melt butter and while hot, stir in peanut butter, mix well and add vanilla, powdered sugar and Rice Krispies.
2. Continue mixing together using hands until well mixed. While still using your hands, roll into balls, one tablespoon at a time. Set aside.
3. Shred paraffin wax on a box grater. Combine paraffin wax and chocolate in a double boiler and heat till melted and combined.
4. Dip peanutbutter balls into melted chocolate and paraffin mix using a toothpick.
5. Cool on waxed paper.
6. (if there is leftover chocolate, toss a handful of almonds in, stir and poor onto wax paper to make almond bark).
