Peachy Soy Ice Cream

For those trying to be heart healthy, this can be enjoyed without pangs of guilt. cholesterol free.
Ingredients:
3 cups silk soymilk (vanilla or plain)
1 1/2 cups fresh peaches , cut into chunks
1/2 -1 cup sugar i used 1/2 cup maple syrup
1 tablespoon soy lecithin--makes the i.c. creamier
1/4 cup soy oil (optional. use if not using lecithin. i did not use)
1 tablespoon vanilla
1/4 t. salt
2 tsp. fresh lemon juice
Directions:
1. The day before you make the ice cream, prep the peaches. Wash the fruit well, dry, and cut in little chunks and in a single layer, Freeze.
2. Blend all ingredients in a blender or food processor with metal blade until smooth and creamy.
3. Freeze according to you ice cream maker instructions.
4. Notes.
5. If you use vanilla soy milk, you will probably want to use significantly less than 1 cup of sugar.
6. I used more salt and then added some lemon juice to enhance the peach flavor.
