Ingredients:
4 cups peaches
2 tablespoons lemon juice
1/2 teaspoon allspice
1/2 teaspoon ground cloves
1/2 teaspoon cinnamon
5 1/2 cups sugar
6 tablespoons liquid pectin
Directions:
1. Toss peaches with lemon juice.
2. Combine peaches and spices in a large pot.
3. Bring to rolling boil.
4. Add sugar and boil for one minute.
5. Remove from heat.
6. Add pectin.
7. Stir well and skim off foam.
8. Immediately spoon into hot sterilized jars leaving 1/4 inch head space.
9. Wipe rims, secure lids and rings.
10. Process in a boiling water bath for 10 minutes.
11. Set jars on a towel to cool.
12. Check for seals.
