Ingredients:
2 cups cubed cooked chicken breast
2 medium peaches, coarsely chopped
1/2 cup chopped walnuts
1/2 cup fat-free mayonnaise
1/4 cup raisins
1 teaspoon curry powder
1 package (5 ounces) spring mix salad greens
Directions:
1. In a small bowl, combine the first six ingredients. Divide salad greens among four plates; top each with 1/2 cup chicken salad. Yield: 4 servings.
